The Creamiest Almond Butter Chia Pudding

I used to be the biggest chia pudding skeptic. Like I refused to make it for so many years but eventually my curiosity got the best of me. It only took me making it once to realize that it’s absolutely delicious and the perfect recipe to meal prep for a grab and go breakfast. If you’re anything like me, you need more grab and go recipes in your life.

Thankfully, all you need are 5 minutes and just a few ingredients to make this almond butter chia pudding which is my kind of meal prep. You can top it with fresh berries, granola, more almond butter, or whatever toppings you choose. Seriously, it’s delicious and such an easy breakfast!

Recipe Ingredients

Almond Milk: almond milk is my go-to to keep this recipe creamy and dairy-free.

Vanilla: everything tastes better with vanilla!

Maple Syrup: just a touch helps sweeten the chia pudding. Honey will also work if that’s what you prefer. Feel free to use as much or as little as you like.

Almond Butter: I love using my homemade almond butter, but feel free to grab your favorite store brand!

Chia Seeds: these are crucial to creating the thick, pudding-like consistency.

Ways to Customize

  1. Swap the milk – instead of almond milk, try using cashew milk, oat milk, hemp milk, or coconut milk. You can also use dairy milk if you prefer.
  2. Use a different nut butter – swap the almond butter with cashew butter, peanut butter, or pecan butter for a different flavor.
  3. Add protein – include your favorite protein powder to make this almond butter chia pudding even more filling. Unflavored, vanilla, or chocolate flavors would all taste great! Just keep in mind that you may need to add more milk, depending on the type of protein powder you use.

How to Make Almond Butter Chia Seed Pudding

Step One: Whisk all the ingredients except the chia seeds in a bowl.

Step Two: Add the chia seeds, and whisk again until well combined.

Step Three: Pour the mixture into a storage container, and place it in the refrigerator. After a few minutes, give the mixture another stir to make sure everything is evenly combined.

Step Four: Leave your chia pudding in the fridge overnight. Then, give it a good stir in the morning, and add your toppings of choice. Enjoy!

My Favorite Topping Ideas

Personally, I think the best part of any chia pudding recipe is the toppings. There are so many to choose from. So, feel free to get creative. However, if you’re looking for inspiration, some of my favorite options include:

  • Fresh fruit like strawberries, blueberries, raspberries, or banana
  • An extra spoonful of creamy nut or seed butter like peanut butteralmond butter, or cashew butter
  • Hemp seeds
  • Shredded or flaked coconut
  • Sliced nuts
  • Granola
  • A splash of nut milk
  • Fresh fruit jam
  • Chocolate chips or cacao nibs
  • Whipped cream
  • Cinnamon or pumpkin pie spice

How to Store

You can store leftover almond butter chia pudding in an airtight container in the fridge for 3 to 5 days. Store it without the toppings, and add them to the pudding when you’re ready to eat!
