Slow cooker Reuben casserole has all the flavors of the classic deli sandwich…but in casserole form. How To Make Slow Cooker Reuben Casserole

  • Spray the slow cooker generously with cooking spray. 
  • Add the toasted rye bread. Top with the cooked corned beef, spread the  sauerkraut on top, then spread the dressing, and top with the Swiss cheese. 
  • Cook on LOW for 2 to 3 hours.

What is a Reuben?

A Reuben is a classic American deli sandwich that features corned beef, Swiss cheese, sauerkraut, and Russian or Thousand Island dressing on rye bread.  

What type of corned beef should you use?

This slow cooker Reuben casserole calls for cooked corned beef. This can be leftover corned beef that is shredded or diced, or you can also use canned corned beef. 

How much dressing should you use?

For me, 8 ounces of dressing is enough. You may want more. Add more to the casserole or serve extra dressing on the side. You can use thousand island or Russian dressing with this recipe. 

Can you add more cheese?

Absolutely. I like to add between 6 slices of Swiss cheese. If you want this casserole to be cheesier, feel free to add as much cheese as you want. Of course you can also use less cheese.

How do you store leftovers?

Store leftover crockpot Reuben casserole in the refrigerator for up to 4 days. 

Can you freeze this?

Maybe. Unfortunately, I have not tried freezing this.

What size slow cooker did I use?

I use small 3.5-quart slow cooker. Feeding a larger crowd? Double the recipe and use a larger 6-quart slow cooker!
