A model, gardener, and self-taught chef, Henson’s approach to food is rooted not in restriction, but in balance, accessibility, and joy. Through her debut cookbook, Every Day Flexitarian, she invites readers into a lifestyle that celebrates nourishment without sacrificing flavor, culture, or comfort. Inspired by her own health journey and love for fresh ingredients, Henson thoughtfully bridges the space between plant-forward eating and everyday practicality, creating recipes that feel both elevated and approachable. With warmth, honesty, and creativity, she is redefining what modern wellness can look and taste like for every household.

    What inspired you to create your cookbook, and how does it reflect your personal story, culture, and connection to food?

    The concept behind Every Day Flexitarian was deeply inspired by my personal journey with food, health, and wellness. For many years, I leaned heavily into a vegetarian lifestyle, believing it was the best path for my wellbeing. However, after struggling with iron anemia, I realized that true wellness required a more balanced and sustainable approach to eating—one that genuinely supported my body while still allowing me to enjoy food in a meaningful way. I wanted meals that were flavorful, satisfying, and nourishing without feeling restrictive or incomplete.

    My culture and connection to food are reflected in the way I approach each recipe. I enjoy taking familiar, comforting flavors and reimagining them with a fresher, more mindful perspective while still preserving the soul and emotional connection behind the dish. Food has always been tied to memory, family, and comfort for me, and I never wanted healthy eating to feel intimidating or exclusive. Whether someone is fully plant-based, simply trying to eat more vegetables, or looking for healthier versions of the foods they already love, I want readers to feel welcomed, represented, and empowered in these recipes.

    Food often brings people together in meaningful ways. What role has cooking played in your family traditions and personal relationships over the years?

    Food and cooking have always represented happiness, love, and togetherness in my life. Some of my most cherished memories were created around the table—laughing, celebrating milestones, sharing stories, and simply being present with the people I care about most. Cooking has always been one of the purest ways I express love and gratitude to others.

    For me, preparing a meal is never just about the food itself; it is about creating an experience and nurturing connection. Whether it’s a simple dinner with family or gathering friends together, cooking has allowed me to create moments that feel comforting, intentional, and memorable. It’s a language of care that has strengthened many of my relationships over the years.

    Your recipes go beyond meals—they tell a story. What emotions or memories do you hope readers experience when they prepare your dishes?

    More than anything, I hope readers experience comfort, joy, connection, and inspiration when preparing these recipes. I want people to feel reminded that cooking does not have to be overwhelming, complicated, or rooted in restriction. Food should feel inviting and emotionally fulfilling.

    I hope these dishes bring a sense of warmth and familiarity while also encouraging people to embrace healthier habits in ways that feel realistic and enjoyable. Many of the recipes are connected to comfort foods and flavors that people already know and love, so my goal is for readers to feel nourished without sacrificing the emotional connection attached to those meals. Ultimately, I want people to discover balance—to understand that wellness and enjoyment can coexist beautifully on the same plate.

    In today’s fast-paced world, many people are looking for comfort, balance, and authenticity in the kitchen. How does your cookbook speak to those needs?

    Every Day Flexitarian was intentionally created to make cooking feel approachable, enjoyable, and comforting. In today’s fast-paced world, many people are craving meals that not only taste good, but also bring a sense of peace, joy, and connection back into their daily routines.

    The recipes are designed to be flavorful, flexible, and realistic for everyday life, allowing people to spend less time feeling stressed in the kitchen and more time enjoying the experience of cooking and sharing meals. I also hope this cookbook helps people reconnect with food in a healthier emotional way. So many people carry guilt, pressure, or confusion around eating, and I wanted this book to restore a sense of freedom and guilt-free enjoyment to the table. It’s about finding balance, not perfection.

    Were there any signature recipes in the book that hold special significance to you or represent your journey particularly well?

    One recipe that holds tremendous sentimental value for me is my tomato soup. When I was a child, my grandmother would make me Campbell’s tomato soup with grilled cheese, and it became one of those comforting meals I always looked forward to whenever I visited her. As I grew older and my palate evolved, I began creating tomato soup recipes that reflected my adult tastes while still holding onto the comfort and nostalgia of those childhood memories. In many ways, the three tomato soup recipes featured in the cookbook are my tribute to my grandmother and the warmth she created through food.

    Another deeply meaningful recipe is my Almost Vegan Caesar Dressing. Not only is it my husband’s favorite recipe, but he also inspired me to create it. That dressing truly represents my personal journey with food and my realization that healthier eating does not have to come at the expense of flavor or satisfaction.

    The recipe reflects my belief in inclusion, creativity, and flexibility. The flavors we grow up loving do not have to disappear because of dietary changes or wellness goals—they can simply be reimagined in ways that still feel indulgent, comforting, and fulfilling. That dressing symbolizes what Every Day Flexitarian is all about: making food feel delicious, accessible, and enjoyable for everyone. And yes, it can absolutely be made fully vegan.

    What challenges did you face while developing the cookbook, and what did the process teach you about yourself creatively and personally?

    One of the biggest challenges in creating Every Day Flexitarian was finding the balance between comfort, authenticity, and wellness while still staying true to my voice and vision. I wanted the recipes to feel nourishing and intentional without losing the familiarity and emotional connection people often seek in food.

    The process taught me a great deal about trusting myself creatively and embracing confidence in my own perspective. Personally, it reinforced the importance of balance not only in the kitchen, but in every aspect of life. Writing this cookbook challenged me to become more patient, disciplined, and vulnerable in sharing my experiences and personal journey. It reminded me that authenticity resonates far more than perfection ever could.

    Heart & Soul Magazine celebrates wellness, culture, and community. How do you believe food can serve as a source of healing, connection, and empowerment?

    I believe food is one of the most powerful forms of healing and connection we have. It brings people together in ways that words sometimes cannot. Sharing meals creates space for conversation, comfort, care, and community.

    When we cook and eat together, we are doing more than simply feeding our bodies—we are nurturing our emotions, supporting our wellbeing, and often reconnecting with our culture and traditions. Food has the ability to remind us where we come from, ground us in the present moment, and inspire us to care for ourselves and the people around us more intentionally.

    It can also be incredibly empowering. Learning how to nourish yourself in a way that feels joyful and sustainable can transform not just physical health, but emotional wellbeing and self-confidence too.

    As your platform and influence continue to grow, what legacy do you hope to leave through your work in food, storytelling, and inspiration?

    As my platform continues to grow, I hope the legacy I leave through food and storytelling is one rooted in freedom, authenticity, and self-trust. I want people to understand that they do not have to live inside rigid boxes when it comes to wellness, food, or lifestyle choices.

    With Every Day Flexitarian, my goal is to show that people can break away from limiting ideas and create a way of eating and living that genuinely works for their real lives. You do not have to choose between comfort and health, tradition and evolution, or culture and wellness. There is room for all of it to coexist beautifully.

    More than anything, I hope people feel inspired to trust themselves, embrace balance, and redefine wellness on their own terms. If my work encourages someone to live more joyfully, more intentionally, and more authentically, then I believe I’ve accomplished exactly what I set out to do.
