Aging Well: News & Insights for Seniors and Caregivers

    Key takeaways
    • Personalized dining increases resident choice, satisfaction, and dignity with expanded menus, healthier options, and individualized service.
    • Juniper Thyme Eatery is a welcoming café for residents, families, and staff offering fresh made to order selections and social connection.
    • A user-friendly portal system enables real-time menus, feedback, special requests, and streamlines staff workflow for efficiency and transparency.

Luis Ruiz, Dining Director at Juniper Village at Lebanon, has been named a member of the DISHED Senior Living Dining Innovation Awards Class of 2026 by Senior Housing News.

As an Elevating the Experience winner, Senior Housing News recognizes Ruiz for his forward-thinking approach to senior living dining. His efforts have elevated resident satisfaction through personalized dining experiences, expanded menu variety, and interactive programs that bring joy and connection to daily life.

Ruiz oversaw the successful opening of the Juniper Thyme Eatery. The café has quickly become a gathering place for residents, families, and team members. Residents enjoy fresh, made‑to‑order selections, specialty beverages, and a welcoming environment that encourages socialization and independence. Families often choose the café as a place to spend quality time with loved ones. Staff appreciate it as a space that energizes the campus and showcases the pride they take in their work.

Another project led by Ruiz is the implementation of a cutting‑edge portal system. The easy-to-use digital platform allows residents and families to view menus in real time, submit feedback, make special requests, and stay informed about upcoming dining events. For staff, the portal streamlines workflow by centralizing dietary information, tracking preferences and restrictions, and improving coordination between culinary and care teams. Families appreciate the transparency and accessibility. Operationally, the system reduces errors, improves efficiency, and supports data‑driven decision‑making.

Finally, Ruiz transforms shared spaces into a restaurant experience during the community’s Monthly Dine-In Events. Décor, music, lighting, menus, and service style all shift to match the theme, creating an immersive dining experience that residents look forward to with excitement.

Ruiz’s nominator tells Senior Housing News, “Luis embodies integrity, respect, and professionalism in every aspect of his work. He consistently advocates for residents’ nutritional needs, cultural preferences, and personal dignity. His decision making is transparent and grounded in doing what is right — not what is easiest.”

Senior Housing News recent sat down with Ruiz to learn what drew him to the senior housing & senior living industry, his perspective on culinary trends, his thoughts on the future of dining in senior living, and much more. SHN: What inspired you to pursue a career in senior living dining, and what continues to motivate your work today?

Ruiz: I chose a career in senior living dining because I enjoy helping others and making a difference in people’s lives. A good meal can bring comfort, happiness, and improve someone’s day, and I wanted to be part of that.

What keeps me motivated is seeing our residents happy and knowing they are receiving a safe and quality way of life through our service. I also enjoy working with my team, helping them grow, and creating a positive dining experience. Knowing that our work has a personal impact on our residents makes this job rewarding.

SHN: What are the top three trends shaping the future of dining in senior living right now?

Ruiz: The top three trends shaping the future of dining in senior living are:

    • More choices for residents – Giving residents more meal options and making dining a more enjoyable experience
    • Healthier meals – Serving fresh, nutritious food while meeting special diet needs
    • Better teamwork and food safety – Training staff to work together, follow safety guidelines, and provide the best care possible

SHN: What is the biggest barrier to innovation in senior living dining today, and how can organizations effectively overcome it?

Ruiz: I believe the biggest barrier to innovation in senior living dining is our way of thinking. We need to focus on what the residents want, even if we think differently. Their preferences and how they see things matter, and we have to respect their dignity.

It’s important to give the community what they want. There is a fine line between improving something and changing it just for the sake of change. If it isn’t broken and it’s making the residents happy, there’s no need to fix it.

SHN: In one word, how would you describe the future of dining in senior living – and why?

    Ruiz: Personalized.

The future of senior living dining is about allowing residents to continue having control, making choices, and enjoying meals that fit their needs and preferences.

SHN: How do you see technology transforming dining operations and the resident experience in the next few years?

Ruiz: I see technology making dining easier and more personalized for residents. It can help track preferences, improve communication, and make daily tasks easier.

In the future, technology will be able to complete full meal production and services. The goal is to use technology to support our teams while continuing to provide a great dining experience for residents.

SHN: Reflecting on your career, if you could give yourself advice on your first day in senior living dining, what would it be and why?

Ruiz: If I could give myself advice on my first day in my senior living career, it would be: the future is now, so embrace it. Be open to learning, adapting, and growing so that when change comes, you are already one step ahead.

SHN: What qualities or leadership traits do you think DISHED Senior Living Dining Innovation Award winners must embody?

Ruiz: I don’t believe in magical moments. I believe in doing small things that can brighten someone’s day. A simple act of kindness or good service can create a moment that someone remembers.

There may be nothing new under the sun, but every day gives us another chance to make a positive difference in someone’s life.
