Can Sockeye Salmon Be Cooked From Frozen?
Yes! You can actually put your wild salmon right into the oven from the freezer. Add about 8-10 minutes to the cooking time to account for the cold temperature of the fish. I also like to loosely cover the salmon when baking from frozen, tenting it with foil to trap the moisture as it cooks a little longer.
How To Shop For Fresh Sockeye Salmon
I have a little secret for you about seafood: It is almost always frozen immediately after being caught. Freezing fish either right on the fishing boat or at the docks helps kill bacteria and prevent the delicate fish from spoilage. Even the “fresh” fish in the grocery store has usually been frozen and then thawed. So, unless you are lucky enough to live near a sockeye salmon breeding ground, you should skip the “fresh” fish section in your grocery store and go straight to the freezer section for your fish. The frozen sockeye salmon in the grocery store will cost less and it will be the same, high quality.

- 2-3 Tbsps Extra virgin olive oil
- 2 tsps black pepper
- 2 tsps smoked paprika
- 2 tsps garlic powder
- 2 tsps dried oregano
- 2 tsps dried thyme
- 2 tsps dried basil
- 2 tsps dried parsley
- 1 teaspoon sea salt
- 4 garlic cloves, crushed
- 4 fresh thyme sprigs
- 1 cup grape or cherry tomatoes, halved or whole
CREAMY DIP:
- Roasted herb salmon, shredded
- roasted garlic coves, minced (You’ll be using the garlic from the roasted salmon)
- roasted herb tomatoes (You’ll be using the tomatoes from the roasted salmon)
- ½ red onion, diced (You can substitute with sweet yellow or white onion or shallots)
- ½ cup vegan mayonnaise (You can use regular mayonnaise, if desired)
- 1 tablespoon lemon juice (You can use store-bought or make your own Lemon Juice)
- 1 tablespoon sweet relish
- 2 tsps djion mustard
- 2 Tbsps chopped fresh dill (You can use 1 teaspoon of dried dill)
- 1 tablespoon chopped fresh parsley, optional
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- sea salt, for taste
TO ROAST THE SALMON, GARLIC, + TOMATOES:

Preheat the oven to 400 degrees Fahrenheit and line a small baking sheet with foil paper or use a great nonstick baking griddle.

Line the rinsed + patted dry salmon along with the garlic cloves and tomatoes onto the prepared baking sheet or griddle, placing them side by side.

Drizzle everything with the olive oil, salt, black pepper, smoked paprika, garlic powder, oregano, thyme, basil, and parsley, rubbing everything atop the salmon until completely coated. Add everything to the oven and roast for 20-25 minutes or until salmon is fully cooked through and the tomatoes have become “jammy” and wilted. NOTE: When done, salmon should “flake apart” when touched gently with a fork.

Remove from oven and using two forks, gently pull the flesh apart on the salmon until roughly “shredded” and in small-medium chunks. Set aside.

Mince the roasted garlic and roughly chop the roasted tomatoes, if desired.
TO MAKE THE CREAMY DIP:

In a bowl, add the shredded roasted salmon, minced roasted garlic, roasted tomatoes along with the vegan mayo, lemon juice, dijon mustard, diced onions, sweet relish, chopped dill, chopped parsley, black pepper, garlic powder, and salt mixing everything together until combined. NOTE: The mixture should look “wet + creamy enough” to scoop together with a spoon.
