Fresh from the Kitchen: Recipes & Food Inspiration

Key takeaways
  • In a slow cooker, combine broth, sun-dried tomatoes, onion, garlic, seasonings; add chicken and cook HIGH 2 to 3 hours or LOW 4 to 6.
  • Stir in heavy cream and Parmesan during the last 15 minutes; stir in spinach just before serving.
  • Instant Pot option: sear chicken, deglaze with broth, pressure cook 8 to 10 minutes, quick release, then simmer cream and cheese.
  • Versatile, family-friendly dish: works with chicken thighs, pairs with pasta, rice, or low-carb sides; reheats well for meal prep.

Slow cooker Tuscan chicken is a rich, comforting meal that’s easy to make.  Chicken cooks low and slow in a creamy, garlic-infused sauce with sun-dried tomatoes and spinach. This is the kind of recipe that tastes like it came from a restaurant but requires minimal effort thanks to the crockpot. Instructions to make Tuscan chicken in the Instant Pot are also included.

Ingredients For Tuscan Chicken

  • Chicken Breasts
  • Sun-Dried Tomatoes
  • Onion
  • Garlic
  • Grated Parmesan Cheese
  • Chicken Broth
  • Heavy Cream
  • Spinach
  • Seasonings: Italian seasonings, salt, pepper
  • Arrowroot Starch or Corn Starch (optional)

How To Make Tuscan Chicken In The Crockpot

Slow Cooker

  1. Add the chicken broth, sun-dried tomatoes, onion, garlic, Italian seasoning, salt, pepper, and starch (if using) to the slow cooker. Stir to mix well.
  2. Season the chicken with salt & pepper and add it to the slow cooker.
  3. Cook on HIGH for 2 to 3 hours or LOW 4 to 6.
  4. The last 15 minutes of cooking time, stir in the heavy cream and Parmesan cheese. Add the spinach to the slow cooker before serving.

Instant Pot

  1. Set Instant Pot to sauté mode. Season the chicken with salt and pepper. Add the oil and sear the chicken for 2–3 minutes per side until lightly browned. Remove the chicken and set aside. Add the onion and cook a few minutes until soft. Add garlic and sauté for an additional minute. Turn off sauté.
  2. Pour the broth into the Instant Pot and deglaze the bottom by scraping all the bits off with a wooden spoon.
  3. Add the chicken back to the Instant Pot along with the sun-dried tomatoes, Italian seasoning, salt, pepper, and starch (if using).
  4. Close the lid and seal the valve. Set high pressure and cook 8 to 10 minutes (depending on thickness of chicken). When cooking time is up, quick release the pressure.
  5. Remove the chicken and set aside. Turn the Instant Pot to sauté. Pour in the heavy cream and Parmesan cheese. Simmer for a few minutes or until the sauce is slightly thickened.
  6. Add the chicken back to the Instant Pot. Add the spinach to the Instant Pot before serving.

FAQs & Tips

What is Tuscan chicken?

Tuscan chicken is a creamy chicken dish usually made with chicken, garlic, sun-dried tomatoes, spinach, and a creamy sauce inspired by Italian flavors.

Can you use chicken thighs?

Yes! Chicken thighs work great with this recipe as well. Cooking time remains the same.

What type of sun-dried tomatoes should you use?

I like to use oil-packed sun-dried tomatoes.  I suggest you add a little of the oil into the slow cooker; it adds depth to the sauce.

Do you need to add the corn starch?

That’s up to you. The corn starch (or arrow root starch) is used in this recipe as a thickening agent. It will make the sauce thicker and creamier. It’s listed as optional so feel free to omit it.

Can you make this dairy-free?

Yes. Substitute the heavy cream with full-fat coconut milk and omit the grated Parmesan.

Can you add other vegetables?

Sure. I suggest vegetables like mushrooms, zucchini, or artichokes.

How do you serve this?

This dish pairs well with pasta, rice, mashed potatoes, mashed cauliflower, or even zucchini noodles for low-carb.

How do you store leftovers?

Store leftover slow cooker Tuscan chicken in the refrigerator for up to 4 days.

What size slow cooker did you use?

I use a  6-quart slow cooker or Instant Pot for this recipe.
