Milk grades are labeled officially as Grade A and Grade B. What’s the actual difference between them? Does the milk grade you use in cooking change how a dish turns out?
Here’s what you need to know before you pick up your next carton from the store.
What’s Grade A Milk?
Grade A milk is the one you’ve seen on every grocery store shelf your entire life. The “Grade A” label isn’t just a quality badge—it’s a regulatory designation that tells you the milk was produced under specific sanitation and handling requirements set by your state’s department of agriculture, typically aligned with the FDA’s Pasteurized Milk Ordinance.
For milk to carry that Grade A label, it has to come from a farm that passes regular inspections. The barn, the milking equipment, and the storage tanks all get reviewed. The cows themselves also have to meet health standards. Dairy animals showing signs of illness or producing milk with abnormal cell counts can disqualify a batch.
Grade A milk is produced under the highest sanitation and cooling standards. It must be cooled quickly after milking to slow bacterial growth, and it has to stay below a set temperature all the way through transport and processing. That chain of temperature control keeps the bacterial count low enough to meet Grade A thresholds.
Here’s what Grade A milk looks like by the numbers:
- Somatic cell count at or below 750,000 cells per milliliter
- Bacterial count before pasteurization at or below 100,000 colony-forming units per milliliter
- After pasteurization, the bacterial count drops to 20,000 CFU/mL or lower
- Temperature held at 45°F or below throughout storage and transport
Because Grade A milk meets these benchmarks, it’s approved for direct sale to consumers.
What’s Grade B Milk?
Grade B milk doesn’t get the same retail treatment as Grade A, and there’s a technical reason for that. The standards for Grade B production are less strict, which means it allows for a higher bacterial count before pasteurization and broader tolerances on farm conditions.
Grade B milk permits a pre-pasteurization bacterial count of up to 300,000 CFU/mL, compared to Grade A’s 100,000 CFU/mL cap. That higher count doesn’t mean Grade B milk is unsafe for its intended use, but it does mean it’s not suited for direct consumer sale.
So where does it go? Grade B milk is sold to processing facilities that turn it into manufactured dairy products. Cheese, butter, powdered milk, and ice cream are among its most common uses.
Those products go through enough processing, heat treatment, or concentration that the starting bacterial count of the raw milk becomes less of a consumer concern by the time the product reaches shelves. The finished product still has to meet food safety standards—the difference is in how the raw ingredient is handled on the way there.
Grade B farms also face less frequent inspection than Grade A farms, and the physical facility requirements are less detailed. A dairy operation might produce Grade B milk for years and never have any safety incidents, but the looser oversight structure is the reason the milk stays out of retail channels.

Which Milk Grade Should You Use in Your Cooking?
Grade B milk isn’t available for retail purchase, so everything on that shelf is already Grade A. You’re not choosing between the two when you shop.
Where the question gets more interesting is if you’re sourcing milk directly from a farm, buying from a dairy cooperative, or processing your own products. In those situations, knowing the grade becomes relevant.
Flavor
Milk grade doesn’t determine flavor. Grade A milk can taste richer or lighter depending on its fat content, while Grade B milk never reaches consumers as a fluid product to compare directly.
For cooking, the flavor difference comes from the type of Grade A milk you use. Whole milk gives a dish a fuller dairy taste, while skim milk fades more easily into the background.
Pasteurization and Heat
Grade A milk has already been pasteurized before it reaches you, which changes its protein structure slightly compared to raw milk. If a recipe calls for raw milk specifically, you’d need to source that separately. But for most cooking—soups, sauces, custards, or baked goods—pasteurized Grade A milk performs exactly as expected.
Fat Content
Grade isn’t the same as fat content. Whole milk, 2%, 1%, and skim are all fat variations within the Grade A category. The grade tells you about the sanitation and inspection history of the milk. The fat percentage tells you about the composition. These are two separate specs, and it’s easy to mix them up when you’re scanning a label.
Fresh Versus Manufactured
If you’re making cheese or butter at home, you’re working with Grade A milk because that’s what you can buy. But if you’re curious about why commercial butter tastes different from homemade, part of the answer is that large-scale producers source Grade B milk in bulk and process it at a scale that makes the economics work differently than a home kitchen.
Shelf Life
Grade A milk’s strict cooling requirements from farm to store give you a product with a lower bacterial load. Starting with fewer bacteria before pasteurization extends the time before the finished milk begins to turn. The grade isn’t the only factor that affects shelf life, though. Packaging and your refrigerator temperature also influence how long the milk remains usable, especially if the carton sits open on the counter.
The Milk Grade Tells You More Than You’d Think
Most people spend zero time thinking about milk grades because Grade A is the only option they ever interact with. But the grade system exists for a reason: it creates a standard that dairy farmers, inspectors, and processors all work within, and it’s what keeps a perishable product consistent across millions of gallons of production each year.
When you see Grade A vs. Grade B milk spelled out side by side, the difference comes down to oversight, bacterial limits, and where the milk ends up. Grade A is for your fridge. Grade B is for the factory. Both follow food safety law—they’re just built for different destinations.
