Listen, if there is one thing about us Taurus zodiacs, it’s that we know a thing or two about food. I mean, honestly, I’ve never met a Taurus who wasn’t a foodie in some aspect.
I tend to gravitate toward cooking. I love arranging balanced plates with different colors, flavors, and textures. The whole sensory experience of food excites me, and I can spend hours looking at food pics and recipes!
However, when it comes to breakfast, I need it to be quick because I am NOT a morning person and I don’t like having the same thing multiple days in a row. I really enjoy a filling spread! See my dilemma? I think I need a breakfast chef. Do those exist?
Until I find one, I’ll keep creating these colorful breakfast plates. They are my favorite way to start the day because they’re simple, quick, satisfying, delicious, and keep me full until lunchtime.

MONDAY
Breakfast Plate #1: Cheese Grits, Turkey Bacon, Fresh Tomato Slices, Blueberries
Have you ever paired cheesy grits with fresh garden tomatoes? It’s such an amazing combination, especially if you have some green onions to throw in there. For the grits, I used smoked gouda and cheddar cheese and added in a bit of chicken broth, cream, butter, black pepper, and garlic salt.
Fresh blueberries paired so well with this plate. My grandma Barb used to say you should try to eat a handful of blueberries every day to keep your mind sharp as you age! Her mind stayed brilliant, aware, and sassy till the day she passed, so there may be something to that! Keep that in mind when you are looking for fruity, easy breakfast ideas to add to your plate.
For the bacon, I’m using my favorite uncured turkey bacon by Applegate.
TUESDAY
Breakfast Plate #2: Mini Bagels With Honey Pecan Cream Cheese, Diced Fruit Salad, Scrambled Cheese Eggs, & Beef Bacon
If you’re in a brunchy mood, this is the breakfast for you! The toasted mini bagels are slathered with Philadelphia’s honey pecan cream cheese, topped with extra pecans and a little honey.
The cheese eggs have a smoked cheddar cheese blend. For the fruit salad, I used fresh peaches, blueberries, strawberries, and kiwi.
Have you ever had beef bacon? It’s been years since I had it, and I was able to find some in my grocery store. The brand is Godshall’s.
WEDNESDAY
Breakfast Plate #3: Toasted Sourdough Bread with Salted Butter, Sliced Fresh Peaches, Turkey Sausage, and Creamed Spinach
This breakfast plate is so good and one of my favorite easy breakfast ideas because all the flavors seem to mix and match so well together.
I’ll put the creamed spinach recipe in the FAQ’s section below. It literally cooks in minutes, and if you’ve never thought about having creamed spinach for breakfast, give it a try! It works.
The sliced peaches paired wonderfully with the turkey sausage.
The sourdough bread is the Rustik Oven brand. I really need to learn how to make my own ASAP!
THURSDAY
Breakfast Plate #4: Loaded Avocado Toast, Banana Bread Parfait, and Turkey Bacon
Loaded avocado toast is the ultimate quick and healthy breakfast. I loaded mine with mashed avocado seasoned with lime juice, garlic, salt, and black pepper.
The banana bread parfait has vanilla bean yogurt, sliced bananas, and banana bread-flavored granola. And Applegate turkey bacon on the side.
FRIDAY
Breakfast Plate #5: Cheddar Cheese Omelet, Roasted Peppers & Potatoes, & Watermelon Slices
For my omelet, I used white American cheese and a 3-cheese blend, plus I added a bit of sour cream to the eggs. The American cheese gave it the creaminess I love in an omelet. The salsa is sweet onion mild salsa, and it’s perfect paired with eggs.
I cooked the petite potatoes that normally come in oven trays in the air fryer and used the included garlic and herb seasoning mix. I threw those mini sweet peppers in at the end to soften them up, and they were ready to go!
Watermelon is one of my favorite fruits for keeping me full! I actually ate half the plate for breakfast and heated the rest for lunch.

It’s easy to use the foods you and your family love to build your own breakfast plates.
- Start with protein. Choose your breakfast protein of choice, like sausage, bacon, eggs, cottage cheese, yogurt, or whatever you’re in the mood for.
- Choose a carb. Pick a carb that pairs well with your protein, such as grits, oatmeal, toast, breakfast potatoes, biscuits, or waffles.
- Add a fruit and/or vegetable. Imagine the colors and flavor combination already on your plate; choose a fruit or vegetable that will complement those flavors and textures. Think berries, melons, peaches, citrus, peppers, tomatoes, and spinach.
- Now add some finishing flair! These are the little things that will elevate the things on your plate, such as salsa on your omelet, whipped cream on your pancakes, fresh herbs in your grits, or granola in your yogurt.
Easy Breakfast Ideas FAQs
How did you make the creamed spinach? Add about 5 oz of spinach to a skillet with a tiny bit of water and cook until wilted. Remove from pan and squeeze out extra liquid with a paper towel. Get it as dry as possible. Set aside. In the same skillet, melt about 1 tablespoon of butter and sauté about 1 teaspoon of minced garlic and a pinch of red pepper flakes until fragrant. Stir in 2 tablespoons of room-temperature cream cheese and about 2-3 tablespoons of heavy cream until smooth and creamy. Stir spinach back in and add 1-2 tablespoons of grated Parmesan cheese. Stir until creamy. Add more heavy cream if needed. Season with garlic salt and black pepper. Serve hot.
What do you put in your mashed avocado? I seasoned it with lime juice, onion powder, garlic powder, black pepper, and salt.
How do you make your banana bread parfait? I used vanilla yogurt, sliced bananas, a little honey, and banana bread granola by Micheles (I think next time I’ll just stick to breaking up a banana bread granola bar since this brand didn’t have much banana flavor)
What can I meal prep for breakfast? Having several items precooked and chopped makes it easy to mix and match breakfast plates for the week. Cook up all of your meats for the week and prep your fruits. Eggs are best made fresh, and since they cook so quickly, I prefer them made fresh, but you can boil the eggs for the avocado toast ahead of time. You can also premake the creamed spinach and freeze it if needed. I use my air fryer for crispy potatoes and peppers in minutes. Pre-chop the red onions and tomatoes.
